Meal plan for the week!

so we are still dealing with illness and schedule insanity this week, so my plan is only through Friday! I am going shopping Saturday morning when I have had some time to actually  make a good list!

breakfast:
bagels/oatmeal/fruit/homemade bread with peanut butter


lunch:
the big family sized grilled cheese sandwich with soup
brown rice and sauteed veggies
Veggies and Dumplings (Vegan Family Favorites)
Soft tacos

Dinner:
Tuna casserole with my canned peaches (yes, I still have some!)
Tacos
Noodle casserole with homemade wheat bread and salad
Potato soup, homemade bread, fruit cobbler


Yes, this week is a bit bigger on casseroles which is something I don't ever do!  Not sure the kids will know what to think! LOL But it is an experiment in sanity-and at least it is still all homemade!

A few new books

I do not have a meal plan to share this week as it has already been one heck of a week!  Monday morning started off with sicks kids and strep throat and I am just exhausted.

However, I had a very good UPS day and got 2 new books from Amazon.

Feeding the WHOLE family.

I am really excited about the whole foods cookbook.  I have only read a little of it tonight since I got home and I love it already!  I am really looking forward to trying a bunch of new things in it.

Home Made Chicken Nuggest with dipping sauce

I have to admit, I have never made sauces like this before.  When I saw that we had chicken nuggets and salad on the menu tonight, I thought "what are we going to dip them in!!!???" Harrison is really picky when it comes to eating meat, but he does like nuggets-so I was hoping to sway him to eat them tonight.

I found these 2 sauce recipes online (they were so easy! I can't believe I didn't do it before!)
Sweet and Sour Sauce - not only was it easy to make, but yes, it was not red!  No artificial colorings here! And the taste was awesome!  The kids gobbled it up like mad.

I also made up Paula Deen's honey mustard from this page - surprisingly-it had NO butter in it! LOL  what kind of Paula Deen recipe doesn't have at least 1 stick of butter in it?  The only thing I did different on this was cut out the horseradish.  It was runnier then I was hoping for-so I might add a bit more mayo next time.

On to the nuggets! If you remember from the meal plan below, we used the home made nugget recipe from 100 days of real food
We baked the nuggets instead of frying them.  I thought the coating was a bit too much-I would definitely use less next time-but overall these were raved on by the kids! They asked me to make them again, so I know we have a winner.

So here you go: honey mustard on the right, sweet and sour on the left - and YES, Harrison ate them!

Breakfast:
Oatmeal with whole wheat toast
Sunshine smoothies (vegetarian family cookbook)
Bagels with cream cheese
oatmeal with whole wheat toast and fruit
homemade yogurt with toast or fruit
muffins
Pear/Mango pancakes (vegetarian family cookbook)

Lunch:
Bagel pizzas, fruit
Vegetable Pot Pie (Vegan Family Favorites)
Sauteed veggies in whole wheat pita
chicken with sweet potatoes and brown rice (comfort food day!)
Hummus with pita and baby carrots...maybe more sauteed veggies

Dinner:
Homemade chicken nuggets with salad and dipping sauce
Vegetable upside down casserole (Vegetarian family cookbook)
Fish Tacos
Ricotta pasta with raisins and peas(vegetarian family cookbook), steamed brocoli and herbed potato bread
Taco salad
Veggie Burgers and oven fried potatoes
Chicken fajitas with corn and spanish rice

Other/snacks:
Pumpkin bread
homemade applesauce

So dear hubby made the meal plan this week. He tends to take ONE cookbook and make the whole plan from it - thus all the recipes from vegetarian family cookbook! LOL I did have to go in and edit some to make it better for me and the kids who would be home. I will let you know how these turn out!

Our Big Green Table

No, our table is not green! But it is big as we are a family of 9 people. We tend to eat mostly vegetarian meals and are now making an effort to be more whole foods as well. Our family is also "greening" up our lives even more...and thus "our big green table"

I used to post my meal plans, pictures and reviews on my other blog, but have decided to create a new one to take on the task of sharing how our family eats-especially with 7 kids!
