today I am making pumpkin butter. This is take 2. We made it the other night, but the kids didn't hear me when I asked them to turn off the crockpot, so it did indeed burn. I couldn't smell it because I was sick! LOL
The cooler weather days are wonderful. it isn't getting hot until really late in the afternoon.
I have a lot of fall baking on the list to be done. Harvest bread, pumpkin muffins, pumpkin butter, roasted apple butter, zucchini bread-the list goes on and on!

Roasted Apple Butter / Kiwi Jam
from vegetarian times magazine.
Oven - Roasted Apple Butter
4lb apples, stems removed and quartered
1 cup cider vinegar
2 cups light or dark brown sugar
1-1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp ground ginger
1/4 tsp ground cloves
1) place apples and vinegar in large stainless steel pot with 2 cups water. cover and bring to a boil. reduce heat to medium and cook 45 minutes to 1 hour or until apples have applesauce like consistency. run the mixture through food mill or press through sieve to seperate pulp from skins and seeds (I used my Ricer)
Transfer pulp (you should have about 5 cups) to large ovenproof dish or dutch overn.
2) preheat oven to 350 degress. stir remaining ingredients into apple pulp. bake 2- 2 1/2 hours, stirring every 15 minutes.
3) meanwhile, sterilize jars and lids: keep jars in hot water until ready to be used.
4) remove jars one at a time and fill with jam...leaving 1/4 inch headspace. seal with lids. planning canning rock or cake rack in bottom of large pot and return jars to pot, adding extra water to cover jars by 1 inch. bring water to a boil and boil 10 minutes. remove jars from water and cool.

so what do you eat?
So there have been times when I went completely vegetarian, and others when I allowed some meat. One of the most common questions/responses I got was:
"what do you eat??!!" A lot of food actually! You are amazed at the different types of foods you end up eating and serving. My kids eat cabbage, bok choy, peppers, onions, carrots, asparagus, brussel sprouts, broccoli, cauliflower, eggplant, tofu -as long as it is marinated or in smoothie!! They eat curry, sushi, and exotic sounding things like adzuki and quinoa. They love fruits and veggies. Does it mean that they are committed to being vegetarian 100% no, not yet. But that is their choice - but they do eat a huge variety of foods that a lot of people do not.
"I could never eat like that" like what? without meat? I don't understand why that is so weird-except for the fact that we have been trained to look at a normal dinner as this:
a slab of meat. potatoes. and a small veggie.
Vegetarians/vegans are not limited to just a salad. Or a plate as pictured above minus the meat. I think that is one of the biggest mistakes a person makes when wanting to become a veg*n....they try to make a plate as above and fill it with a meat substitute or limit themselves to salad. They fail rather quickly because that is boring and hardly fulfilling.
One of the first books I read that really hit home to me was the Vegan Lunchbox. It taught me a new and exciting way to look at meal structure. I learned that a plate doesn't have to be a slab of meat, veggies and potato. But that you could combine items such as a sliced banana bread with a smoothie for lunch. (Yes, that is one of Harrison's favorites!) That a corn muffin filled with beans and a side of collard greens can be taken in a lunch box to school. I don't have the time to sit and think of all the combinations, but the main point is, I learned there was a different way to make a meal plate. And it was empowering! Yes, you can serve muffins with soup for dinner. And that eating more whole foods type of meals will fill you up more and cut down on your constant rummaging for food!
"aren't those meat substitutes gross?"
Yes, they are. And NO, you don't have to eat them! We hardly ever use them in our meals. I figure vegetarian is to eat no meat. That doesn't mean you just substitute meat with a fake substance to stand in. Instead of using "meat" crumbles for tacos, find a recipe with veggies and rice instead..and so on.
If you try to replace all the meat in your diet with substitutes you will find yourself failing. You have to adjust your way of thinking of what a meal plate is.

bananas and strawberries, a small scoop of homemade macaroni and cheese-and yes, an oreo for dessert. Not pictured was his cup of soy milk to drink. We actually didn't have any veggies that day for lunch-and that is ok too! He snacks throughout the day on carrots and edamame :)
But he doesn't like meat. Not sure if it is texture thing with him or what, but for now, he doesn't eat meat but a very small amount once in a blue moon!
Aren't your kids unhealthy without meat? How do they get enough protein?
We eat beans, we eat legumes, we eat nuts, nut butters, alternative milks, grains, eggs etc. they all have protein. The "vegetarians are deprived of protein" is a myth...and if you eat a well balanced meal, you will be good. Now, of course that are exceptions to that rule, just like there would be with an non-vegetarian diet. The point is, if you eat healthy and pay attention to your foods, you are most likely going to be fine.
So yes, that is my experience. I learned recently that Harvard did a study and revamped the food "pyramid"
I have to admit it looks a lot better than it used to, and finally addresses that milk is not healthy for our bodies! but that is a different day, different post! LOL

Curry in a hurry
new recipe that I tried tonight. The only thing I can say that was bad was that it wasn't actually FAST to make! LOL but oh man, was it good!
I got this new cookbook, Peas and Thank You a few weeks ago. I sat down and promptly read it beginning to end! It is amazing! Such simple recipes that do not require a lot of odd ingredients and only tofu or meat substitutes!
Tonight, we did Curry in a Hurry. Yes, it did call for tofu, but I actually marinated it and cut it down small for everyone to try. I chose this recipe based on what I had received in my Bountiful Baskets box. It calls for cauliflower, broccoli, asparagus, carrots, peppers, curry, basil, lime and coconut milk.
We topped it off with roasted cashews and white basmati. It was divine. I will definitely make this again!

I got a new cookbook this last week. Sat down and read it cover to cover. It totally inspired me. this is the first meal plan I have made in a long time, and i can't wait to go to the store to get all the food!
Breakfasts:
variety of smoothies, oatmeals, bagels etc
Lunch/brunch:
Pinwheel wraps with tempeh, spinach and apple
Apple Cinnamon pancakes
Oatbran cereal with pumpkin
"margarita" smoothie with zucchini bread
fruit, cheesecake dip and....
salad available everyday.

Lemon Lentil soup and sourdough bread with salad

Going back to good eating
so over the last few months, I admit-we've been eating a lot more meat. These are things I have learned:
I really hate to cook meat.
My cholesterol has gotten worse after eating it.
My body does NOT like to eat it....
So what does that mean? We are going back to our mostly vegan/vegetarian way of eating. I cannot tell you how much better I feel just making the decision.
So watch for updates, I will be posting our awesome meal plans again. And sharing yummy recipes etc.

Pumpkin Chili-details
So we are making pumpkin chili for the girls Bethel of Job's Daughters tonight. I decided since I had altered it a little I was going to post what I did-with pictures because this is truly a great chili!
I did a huge pot--about to feed my family with a few nights of leftovers. you could do a smaller portion.

| Add 2 Tbsp of Pumpkin Pie spice...I made my own |
| Place hamburger and 1lb cooked beans in pot |
| Add 2 cans diced tomatoes, or more if desired. and 1 1/2-2 Tbsp Chili powder |
| 1 29oz can of pumpkin puree and 1/2 cup sugar |
| Sautee 2 green bell peppers and 2 onions |
| Add to mixture |
| 64oz of V-8 or other vegetable juice |
| Cook on low heat for 8 hours in crockpot or simmer for 1 hour on stove top |

Pumpkin Chili in the crockpot
Yesterday I saw that the weather today was going to be cold and rainy. I LOVE IT! So I decided a nice warm comforting meal was in order for the menu tonight.
Yes, it is autumn...so what could be better than pumpkin chili?!!!
Adapted from this recipe
I added 1lb extra hamburger, a 64 oz container of v-8, extra spices and beans and did a whole can of pumpkin instead of half.
So kind of funny, I went to the store to get bell pepper and onion because somehow I was actually out! *gasp*
While there I realized no cans of beans - well they wanted $1.50 for 1 can of beans! yes, so at 1am I was starting a pot of beans last night.
Then today, I realized, no pumpkin pie spice! LOL so I made some up from this recipe here
the only thing not from scratch was canned tomatoes and the canned pumpkin...maybe next time I should remedy that!
Looks great and smells divine! I can't wait to taste it.

Baked Macaroni and cheese-soo simple
I know that I talk about my baked macaroni and cheese a lot, but I have never shared it-so here goes. I never learned to cook as a girl. Everything I have learned has been since I was married, and I am far from a chef! I wanted a homemade macaroni and cheese that did not need the preparation of a white sauce. Because those sauces scare me. Seriously. And then I came across a version in the Joy of Cooking that met my needs! And best part was that it was baked and not runny - reminiscent of the elementary school stuff that I loved. This has been modified and used many years-I hope you enjoy
Ingredients:
macaroni noodles (1 lb)
2 lb cheese- I use a mixture of cheddar and sharp. more sharp adds more flavor.
2 cups of milk
2 eggs
boil noodles. layer in baking dish: noodles, cheese, noodles cheese. combine milk and eggs and pour down the side of the pan. add pepper to top if desired. cover with foil and bake about 30 min at 350 degrees.

Review: Macaroni and Cheese Lite (Moosewood)
I didn't get a picture of this one, but this was a clear winner to me!
This macaroni and cheese is full of veggies. When you first read the recipe, you start to think that it is just going to taste..odd. Who puts cabbage in macaroni and cheese? MOOSEWOOD does! And it was GOOD!
The vegetables were mushrooms, cabbage, spinach, onion and garlic. It also had cottage cheese and sunflower seeds.
Doesn't sound like your every day mac and cheese huh?
The flavors were very bold and I couldn't stop eating it. We love different versions of macaroni and cheese around here--and this is definitely another one to be repeated and added to the rotation!

New Year-New plan!
Yes, I know...December was a bad month for a meal plan. But--I am back and lets see how good this week is!
Breakfast...since our schedule is off so bad time wise with Christmas break, this week's breakfast will be easy as we adjust to the time schedule again.
Breakfast:
cereals, oatmeal, yogurts, toast and peanut butter, fresh fruits.
Lunch:
Sauteed veggies and blue cheese on toast
Samosas with greek yogurt and fruit
Edamame, rice and oranges
Lentil and brown rice casserole
sandwiches or soup
Honey baked lentils with sour cream muffins
Dinner:
Bhuna Gosht, basmatti, dhal, raita
Macaroni and cheese lite (moosewood) with a side salad
lasagne, brocoli and bread
Tart and tangy baked beans, corn bread and sauteed greens
Vegetable stroganoff, bread and yogurt with fruit

Breakfast...since our schedule is off so bad time wise with Christmas break, this week's breakfast will be easy as we adjust to the time schedule again.
Breakfast:
cereals, oatmeal, yogurts, toast and peanut butter, fresh fruits.
Lunch:
Sauteed veggies and blue cheese on toast
Samosas with greek yogurt and fruit
Edamame, rice and oranges
Lentil and brown rice casserole
sandwiches or soup
Honey baked lentils with sour cream muffins
Dinner:
Bhuna Gosht, basmatti, dhal, raita
Macaroni and cheese lite (moosewood) with a side salad
lasagne, brocoli and bread
Tart and tangy baked beans, corn bread and sauteed greens
Vegetable stroganoff, bread and yogurt with fruit
Vegetarian mulligatawny soup with popovers
I am sure looking forward to this week of food!

Meal plan for the week!
so we are still dealing with illness and schedule insanity this week, so my plan is only through Friday! I am going shopping Saturday morning when I have had some time to actually make a good list!
breakfast:
bagels/oatmeal/fruit/homemade bread with peanut butter
lunch:
the big family sized grilled cheese sandwich with soup
brown rice and sauteed veggies
Veggies and Dumplings (Vegan Family Favorites)
Soft tacos
Dinner:
Tuna casserole with my canned peaches (yes, I still have some!)
Tacos
Noodle casserole with homemade wheat bread and salad
Potato soup, homemade bread, fruit cobbler
Yes, this week is a bit bigger on casseroles which is something I don't ever do! Not sure the kids will know what to think! LOL But it is an experiment in sanity-and at least it is still all homemade!

A few new books
I do not have a meal plan to share this week as it has already been one heck of a week! Monday morning started off with sicks kids and strep throat and I am just exhausted.
However, I had a very good UPS day and got 2 new books from Amazon.

and
Feeding the WHOLE family.
I am really excited about the whole foods cookbook. I have only read a little of it tonight since I got home and I love it already! I am really looking forward to trying a bunch of new things in it.
That's all for tonight!

Home Made Chicken Nuggest with dipping sauce
I have to admit, I have never made sauces like this before. When I saw that we had chicken nuggets and salad on the menu tonight, I thought "what are we going to dip them in!!!???" Harrison is really picky when it comes to eating meat, but he does like nuggets-so I was hoping to sway him to eat them tonight.
I found these 2 sauce recipes online (they were so easy! I can't believe I didn't do it before!)
Sweet and Sour Sauce - not only was it easy to make, but yes, it was not red! No artificial colorings here! And the taste was awesome! The kids gobbled it up like mad.
I also made up Paula Deen's honey mustard from this page - surprisingly-it had NO butter in it! LOL what kind of Paula Deen recipe doesn't have at least 1 stick of butter in it? The only thing I did different on this was cut out the horseradish. It was runnier then I was hoping for-so I might add a bit more mayo next time.
On to the nuggets! If you remember from the meal plan below, we used the home made nugget recipe from 100 days of real food
We baked the nuggets instead of frying them. I thought the coating was a bit too much-I would definitely use less next time-but overall these were raved on by the kids! They asked me to make them again, so I know we have a winner.
So here you go: honey mustard on the right, sweet and sour on the left - and YES, Harrison ate them!

Hummus with pita and baby carrots...maybe more sauteed veggies

Vegetable upside down casserole (Vegetarian family cookbook)
Fish Tacos
Ricotta pasta with raisins and peas(vegetarian family cookbook), steamed brocoli and herbed potato bread
Taco salad
Veggie Burgers and oven fried potatoes
Chicken fajitas with corn and spanish rice
Other/snacks:
Pumpkin bread

So dear hubby made the meal plan this week. He tends to take ONE cookbook and make the whole plan from it - thus all the recipes from vegetarian family cookbook! LOL I did have to go in and edit some to make it better for me and the kids who would be home. I will let you know how these turn out!
